This cupcake was created by a pastry chef, Lasne, around 1890, whose shop was located near the Bourse in Paris. Why this name of financier? We do not really know. Different versions exist. One says that this cake was designed so that the financiers of the Stock Exchange can taste it without getting their hands dirty. The other maintains that this name comes from the rectangular mold of the financier who evokes a gold bar.

  • 145 g icing sugar
  • 55 g almond powder
  • 2 g baking powder
  • 1 g of fine salt
  • 80 g butter
  • 5 egg whites
  • Butter for the mold

Preparation for Financial Receipt

Gather the flour, icing sugar, baking powder and salt in a colander and sift them in a bowl.
Melt the butter until it is nutty.
