Gingerbread is a very old cake that dates back to the Middle Ages. It was so appreciated and manufactured that Henri IV, in 1596, had the special status of grocer's breads published, distinct from that of pastry cooks. The spices vary by region. Nothing prevents you from inventing your own!

Ingredients for Gingerbread Recipe
- 115 g honey
- 70 g caster sugar
- ¼ untreated orange zest
- ¼ untreated lemon zest
- 1 vanilla pod
- 1 g cinnamon powder
- 1 g star anise powder
- 115 g water
- 45 g butter
- 160 g flour
- 10 g baking powder

Preparation for Gingerbread Recipe
Pour the honey and sugar into a bowl.
Grate the orange and lemon zest on top.
Split the vanilla pod and open it. With the blade of a knife, scrape the seeds and add them. Also add the cinnamon and star anise. Mix everything well.
Pour the water and the butter cut into pieces in a saucepan and bring to the boil.
Then pour spiced honey into the bowl. Stir.
Sift together the flour and baking powder and add them little by little while stirring.
Set the oven to 160 ° C.
Butter a 20 cm long cake pan. Pour the batter into it. Tap it to distribute and pack it well.
Bake for 40 minutes. Check the doneness with a needle.
Let the gingerbread sit for 5 to 10 minutes out of the oven. Then unmold it on a grid.
