Herring is rich in Omega 3, put it often on the menu. This salad can be made all year round with frozen peas.

Ingredients for Herring salad, carrot, peas
- 700 g peas
- 1 bunch carrots
- 1 green apple
- 4 smoked herring fillets
- 2 tsp. to s. capers
- 4 c. to s. olive oil
- 1 lemon
- Salt, freshly ground pepper
Preparation for herring salad, carrot, peas
Shell the peas and cook them in boiling salted water for 10 min. Drain them with a skimmer.
Scrape the carrots, wash them and cut them into cubes. Cook them for 10 min in the water of the peas and drain them.
Peel the apple, cut it in four, remove the seeds and cut the flesh into cubes.
Cut the herring fillets into small pieces.
Mix everything in a salad bowl. Add the capers. Pour in the olive oil and lemon juice and mix everything.
Taste and add the salt seasoning. Pepper well. Serve warm or chilled.
