BLUEFIN TUNA SEIZED


Ingredients for 4 people

4 steaks of bluefin tuna
15 ml (1/2 teaspoon) Sriracha chili sauce
15 ml of Mycryo butter (cocoa butter)
1 garlic clove
30 ml (2 tablespoons) of sesame seeds
250 ml (1 cup) orange juice
Salt and pepper to taste

Preparation

  1. Sprinkle or coat the tuna with Mycryo butter.
  2. Chop the garlic.
  3. In a hot skillet over high heat, sauté tuna 1 min per side, salt, pepper and set aside on a plate.
  4. Deglaze the pan with the orange juice, then add the garlic and Sriracha sauce.
  5. Mix and put the tuna in the pan to let it cook for a further 1 min.
  6. Arrange the plates with a bed of cooked asparagus on which you place the tuna topped with the cooking sauce and some sesame seeds decoration.
