LACTOSE-FREE BANANA AND ALMOND ICE CREAM
Ingredients
3 bananas, medium sized, peeled and frozen in pieces
2 tbsp. almond butter
1 C. tablespoon of coconut oil, fondue
1 C. vanilla extract
1/4 c. salt
2 tbsp. almonds, natural, chopped
2 tbsp. dark chocolate, chopped
Preparation
- Place the bananas in a food processor or blender and mix.
- Scrape the sides of the bowl as needed.
- Add the almond butter and melted coconut oil, then mix for 2 to 3 minutes.
- Add the vanilla extract and salt.
- Transfer the “ice cream” into a container; add the chopped almonds and chocolate. Put a lid on or cover with plastic wrap.
- Leave the container in the freezer for 1 to 2 hours.
- Take the ice cream out of the freezer and let it sit for 5 minutes at room temperature before eating.
- Drop several spoons into cups, then enjoy this nutritious alternative to ice cream.
