FILETS OF WALLEYE WITH PORTO

Ingredients

4 servings of 150 g walleye
50 g shallots, chopped
200 ml of port
100 ml of vermouth or dry white wine
450 g fresh noodles (preferably whole wheat)
250 ml of cream 35%
Salt and pepper

Preparation

  1. Place the fillets in a skillet. Add the chopped shallot, port, white wine, vermouth, salt and pepper and cook for 5 minutes on the heat.
  2. Cook noodles (al dente) in salted boiling water. Book.
  3. Remove the sole fillets. Keep them warm and reduce the cooking stock to 200 ml.
  4. Add the cream. Reduce. Check the seasoning and do not boil.
  5. Place hot noodles in the bottom of each plate.
  6. Place the sole fillets on top and cover with the sauce.
