Fish fillets, zucchini, broccoli
All fish fillets are suitable for this recipe. Choose the cheapest ones according to the market.

Ingredients for Fish fillets, zucchini, broccoli
- 1 broccoli
- 2 zucchini
- 2 spring onions
- 3 c. to s. olive oil
- 4 fish fillets of 100 g
- Salt, Espelette pepper
Preparation for Fish fillets, zucchini, broccoli
Detach the broccoli heads, wash them and immerse them in boiling salted water for 3 min. Then drain them.
Wash the zucchini, cut the ends and cut the flesh into small cubes. Clean the spring onions and cut them into rings.
Heat the olive oil in a sautoir and sauté the zucchini for 3 min. Add the broccoli and cook for another 3 min, stirring. Salt lightly.
Then add the spring onions and mix them well. Cook another 2 to 3 min. Add 2 to 3 pinches of Espelette pepper, stir well.
Place the fish fillets on top. Salt them lightly. Cover the pan and cook for 5 to 7 min depending on the thickness of the fillets.
Season with a little Espelette pepper and serve in the sautoir.
