Breaded Salsify

Ingredients for Breaded Salsify
- 1 can of salsify
- 3 egg yolks
- 150 g flour
- 200 g fine breadcrumbs
- 6 c. to s. olive oil
- Salt, freshly ground pepper
Preparation for Breaded Salsify
Drain the salsify and cut them into sticks.
Place the egg yolks on a plate and whisk them. Put the flour and breadcrumbs on two other plates.
Roll the salsify first in the flour. Then dip them in the egg yolk and then roll them in the breadcrumbs.
Heat the olive oil well in a pan. Place the salsify there and cook them on all sides for 5 to 10 min, until they are golden brown.
Add salt and pepper. Drain the salsify and dress them in a hot dish.
