Mirabelle plum cake
A seasonal snack with a low glycemic index for young and old!

Ingredients for 6 people:
- 200 g chickpea flour
- 50 g of cornstarch
- 80 g of agave syrup
- 2 eggs
- 100 g of white almond puree
- 150 ml of vegetable milk (almond or plain soy)
- 300 g of mirabelle plums
- 7 g of baking powder
- Cinnamon
Preparation
Preheat the oven to 165 ° C.
Mix the flour, starch, baking powder, a pinch of salt, the agave syrup and the cinnamon. Add the almond puree, the eggs and the almond milk, then mix.
Rinse the mirabelles and cut them in 2. Arrange them in the buttered mold, add the dough. Bake and cook for 40 minutes.
Once cooked, remove the pan from the oven, wait a few minutes and unmold the cake.
