“MEN’S” BURGERS, FRIES WITH THYME, LEMON AND PARMESAN
Ingredients
meatballs
1 lb. chopped veal
1 cup cooked bacon
1 egg
3 c. chives
2 French shallots, chopped
2 tbsp. Dijon mustard
2 garlic cloves, chopped
To taste salt and pepper of the mill
Mayonnaise
Mayonnaise flavor
To taste pickles, chopped
To taste Sriracha sauce
Onion and mushroom garnish
1 onion, chopped
1 packet of mushrooms, cut into quarters
1/2 cup of veal juice, reduced
Olive oil
Burgers “man”
4 buns
Mayonnaise
Cooked meatballs
Onion and mushroom garnish
4 brie slices
2 fresh tomatoes, sliced
Roquette, chives, Iceberg
To taste salt and pepper of the mill
Home fries with thyme, lemon and parmesan
5 branches thyme, leafless
2 lemons, zested
1 cup grated Parmesan cheese
To taste salt and pepper of the mill
Bleached French fries
Preparation
meatballs
- Combine all ingredients in a bowl and form into 4 meatballs.
- Cook meatballs on the barbecue or in a frying pan over medium heat, 5 minutes per side, or until the juice of the meatballs is clear.
Mayonnaise
- In a bowl, combine mayonnaise, Sriracha sauce and pickles; book.
Onion and mushroom garnish
- Sauté the onion in the oil until you get a nice color.
- Add the mushrooms and brown them.
- Deglaze with the veal juice.
- Reduce by half.
Montage of burgers
- Assemble each ingredient in stages and serve with French fries.
Fries with thyme, lemon and parmesan cheese
- When the fries are cooked, coat them in the mixture of thyme, lemon and parmesan.
