Kombucha

ingredients
For 1 L of drink:
- 1 strain of Kombucha
- 1 L of spring water or filtered water
- 100 ml of already fermented kombucha or cider vinegar
- 2 tbsp. to c. green tea or black tea bio
- 70 g of organic cane sugar

- 1 large glass jar
- 1 glass bottle
- 1 colander
- 1 fabric
- 1 elastic
Preparation
First fermentation
Boil the water. Out of the heat, brew the tea for about ten minutes.
Add sugar and mix. Filter the mixture and let cool.
Place in the glass jar the kombucha strain, the lightest and smoothest part up. Add already fermented kombucha or cider vinegar to acidify the medium as well as the cooled preparation.
Cover the glass jar with a cloth and elastic.
Leave to ferment in the dark at room temperature (about 20 ° C) for 7 to 10 days.

Second fermentation
Remove the mushroom and place it on a plate with a vinegar base (keep in a cool place).
Transfer the drink to a glass bottle and add cinnamon sticks, turmeric, or ginger to flavor it (you can also use flowers, floral water, berries ...).
Let it ferment for one day at room temperature for a flavored drink and even more sparkling. (Close your bottle with a cloth and elastic).
Reserve a little drink for your future preparations.

Precautions
Kombucha should not be placed in contact with metallic materials.
