CREAM OF BROCCOLI AND FENNEL
Ingredients
1 broccoli, roughly chopped
1/2 bulb of fennel, coarsely chopped
2 red apples, peeled and quartered
4 cups (1 L) chicken broth (or vegetables)
Salt and pepper
1 clove of garlic, minced
1 bay leaf
Preparation
- Put all the ingredients in a saucepan, cover and bring to a boil.
- Simmer for about 20 minutes or until vegetables are tender.
- Puree using the hand blender.
- Adjust seasoning.
