SHRIMP ENCHILADAS

Ingredients for 4 people

30 ml (2 tablespoons) of olive oil
2 onions, chopped
10 ml (2 tsp.) Garlic, chopped
2 peppers, minced
2 tomatoes, diced
125 ml (1/2 cup) tomato sauce
375 ml (1 1/2 cups) fresh northern prawns
15 ml (1 tablespoon) fajita seasonings
Salt and pepper, to taste
4 tortillas
330 ml (1 1/3 t.) Of commercial salsa
250 ml (1 cup) cheddar cheese and Monterrey Jack shredded cheese mix

Preparation

  1. Preheat oven to 205 ° C (400 ° F).
  2. In a skillet, heat oil and sauté onions with garlic and peppers for 2 minutes.
  3. Add tomatoes, tomato sauce, shrimp and fajita seasonings.
  4. Simmer over medium heat for 5 minutes. Season.
  5. In the center of each tortilla, place a quarter of the filling.
  6. Roll the tortillas and arrange them side by side in a baking dish.
  7. Cover with salsa sauce and grated cheese.
  8. Fry in the oven for 10 to 12 minutes.
