CHEESE CAKE WITH KIWI

A delicious recipe with a little fruit used in pastries.

Ingredients for 6 people: 

  • 100 g shortbread type cakes 
  • 50 g melted butter 
  • 20 cl of liquid cream 
  • 300 g cream cheese (philadelphia type) 
  • 50 g of sugar 
  • 2 organic lemons 
  • 4 kiwis 

Preparation 

In a bowl, crush the biscuits and mix the crumbs with the melted butter. 
On a presentation plate, line a pastry ring with parchment paper and spread the biscuit crumbs in the bottom, compacting them well, then reserve in a cool place. 
Peel and mix a kiwi.
In a salad bowl, whip the cream cheese with the zest of 2 lemons and the juice of one of the lemons and the sugar. 
In another bowl, whip the liquid cream into whipped cream and then add it to the cream cheese delicately and several times. 
Remove the sanded bottom of the refrigerator, divide half of the preparation, insisting on the edges to form a well, then add the mixed kiwi in the well. Gently add the rest of the repair and smooth the surface. 
Cover the cake with parchment paper and keep it in the refrigerator for 24 hours. 
At the time of tasting, peel and finely cut the remaining 3 kiwis.
Unmould the cheese-cake, then arrange the kiwifruit slices on it.
